Gluten free meals using rice, pea flour, quinoa and other substitutes
Socca is a chickpea bread from Nice in France. See recipe on the home page. I prefer using yellow pea flour.
Yellow pea flour "cheese" made from boiling water, with pea flour and salt. Microwave in glass bowl and cool. I sets solid.
Keep adding vegetables to the oven roast every 20 minutes. Start with butternut and potatoes, lastly greens and grated cheese.
Flapjacks: add chopped onion or leeks, cabbage, mushrooms, etc to beaten egg with salt, oil, rice flour and baking powder.
Make mini pizza bases from cooked polenta or yellow pea flour "cheese" slices. Keep in the freezer. for quick snacks add toppings and microwave.
Enjoy oven baked vegetables at lest once a week. If in a hurry, pre cook the butternuts and potatoes.
Add amasi or yoghurt, a little white wine and grated cheese to plain steamed rice for quick fake risotto. add chopped mushroom, etc.
Make Turkish pizzas. gluten free dough in strips with raised edges. Fill with refried beans, onion and peppers, tomato paste, /top with cheese and bake.
